Miodownik, professor of materials and society at University College London, follows up his award-winning look at the solids we depend on, Stuff Matters, with an equally fascinating look at their restless, shape-shifting counterpart: liquids. Undertaking his investigation on a transatlantic flight, Miodownik focuses on what’s near at hand, discussing the properties, uses, and special attributes of fluids as varied as the oceans, which cover more than 70% of Earth’s surface; the water that comprises as much as 60% of the weight of a human body; as well as the kerosene/aviation fuel powering the plane, the glue helping to hold things together, and the liquid coolant, liquid crystals, soap, ink, and assorted beverages on board.
